Corvina is a generic name for the Red drum or redfish of which there are over 270 species. Corvina is like a warm water snapper with larger flake, and is mild, sweet, and firm. It is pink when raw but cooks up snow white. Our corvina comes from the West coast of Central where fishing pressures are less than they are in Florida and the Gulf of Mexico. Corvina from the Eastern Central Pacific is not rated by the MBA seafood watch program. Any fishery that uses a hand-line or pole-and-line catch method, like that of Corvina from Central America, will do a better job than any other fishing method at targeting the correct species and causing less disruption to the marine ecosystem.
