Opakapaka is an extremely popular species of snapper in Hawaii and is also referred to as Hawaiian Pink snapper, Crimson snapper, King snapper, and Rosy snapper. It has light pink flesh with an almost translucent appearance with a mild, sweet, and ocean-fresh flavor. For over a century, opakapaka has been the most important bottomfish species in Hawaii in terms of landed weight and value. It is caught with vertical hook-and-line, which results in very little collateral damage to the marine ecosystem and is very sustainable.
