Yellowtail Amberjack is the wild version of the popular sushi item, Hamachi. It is prevalent in the Eastern Central Pacific Ocean, where we receive our product. It is caught using handlines, trolling lines, and driftnets and the gear is relatively selective thereby minimizing bycatch and other incidental disturbances to the ocean environment. Populations in the Central Eastern Pacific, namely Mexico, are at target levels and we receive fresh product regularly from our trusted supplier base.
