Fresh Alaskan Halibut Cheeks are cut from the fleshy, boneless cheek muscle of the Halibut and average three inches in diameter depending on size of the fish. Compared to Halibut Fillet, the cheek is slightly sweeter, and the texture is closer to that of a scallop or crabmeat. They are equally as mild, tender, and meaty as the fillet but do not have the same large flakes when cooked. The Halibut Cheek is one of the true great Alaskan delicacies.
