Honolulu Catch sources its fresh swordfish from the wholesalers who buy high-quality, fresh product at the Honolulu fish auction. Hawaii produces consistent, top-of-the-line product and the fishery is very well-managed and the fish is sustainably harvested. There is also high-quality Swordfish coming out of other Pacific regions, like the Central and Southwestern Pacific, but the time-to-market is too long for our standards. Hawaiian swordfish goes through the Honolulu Fish Auction where wholesalers quickly acquire fresh product and sell it to us daily.
